Kashmiri Gulkand is often compared to rose petal jam and comfitures that are easily available in the market but it is far more superior in taste, not just because of the variety of rose that is used to make it but also the method of preparing. Gulkand is sun-cooked over a period of at least a month.
In Ayurveda, Gulkand is considered medicinal. It is primarily known for its cooling properties which are beneficial for moderating high body temperatures. In addition to being a natural coolant, it has several other benefits which include improving memory and eyesight, helping in the process of digestion, relieving lethargy, itching, inflammation and redness, removing toxins and purifying the blood, and aiding in relieving constipation, acidity, gastritis and indigestion.
The key ingredient Rose is known to be an antidepressant, anti-spasmodic, aphrodisiac, anti-bacterial, anti-viral, antiseptic, anti-inflammatory, blood tonic, digestive stimulant, expectorant, and a menstrual regulator.
Gulkand can also be used as a star ingredient in various new and innovative desserts and drinks, some of which include Paan, Gulkand Peda, Gulkand shake, Gulkand thandai smoothie, Paan Truffles, Gulkand cupcakes, ice cream, kheer, etc.
